Summer Yummmms

Summer brought with it many amazing and delicious foods our family and friends got to enjoy.

We are second year gardeners and much of what we prepared involved fresh fruits and veggies that we grew! What a blessing to be able to enjoy those simple treasures throughout summer. And I worked at preserving some so we could enjoy throughout the year as well.

We ended the month of May with a Pioneer Woman inspired meal for Addy. Pioneer Woman is her favorite chef to watch. This meal:

was quite tasty!

And, because our family is in love with Ree Drummond (Pioneer Woman), Josh first made a recipe of her BBQ sauce and put it on chicken for us. I've since made it a few times for different recipes. We love it!

I made us lots of smoothies this summer! This one was topped with chia seeds.
Josh's pancake and sausage face for Addy

 Fruit infused water
Salad with veggies from our garden
Farmers Market strawberries! Look at those beauties! I didn't make any jam with the strawberries this year but I have a bunch frozen. Lizzie was over the weekend we got them and helped me with the cleaning and trimming!

We celebrated our hard work with shortcake!

 More garden beauties...

 Addy's first shortcake

My first go at homemade french fries. I topped with rosemary and coarse sea salt

I made some whole wheat triple berry muffins this summer. They were really scrumptious. But the recipe just kind of evolved so I'm not sure I can duplicate!
With all of the zucchini from our garden, I made several batches of Chocolate Zucchini Cake
Waffles were a summer favorite that we loved to top with powdered sugar, orange zest and blueberries

 Me and my little chef!
Pancakes are another one of Addy's breakfast items. I made a few batches of homemade berry sauce for our breakfast items for her to dip them into. Yum.
 More yummy smoothies!
We did a ton of blackberry picking in our neighborhood and froze lots of it!

And we picked many pounds of peaches and froze them!

Addy helped me make Arabic Beans and Rice!

These Carrot Muffins were really moist and delicious! Addy loved them!
Even scraps are pretty to me!
Homemade Peach Blackberry Pie, but my crust was naughty :-(

Cucumbers and Tomatoes from our garden dressed in lemon juice and dried mint

Homemade Blackberry Cobbler...another Pioneer Woman recipe (of course!)

 Peach, banana, pineapple smoothie

I made lots of Pico de Gallo this summer with all of our tomatoes. My friend Mel came over for one such session!

 Homemade Pesto! Yummmmm

 I re-did our pantry!

Pesto Pasta topped with fresh tomatoes and basil from our garden with sausage on the side.
 And more Zucchini

Roasted tomatoes and basil from our garden to make homemade tomato sauce

 Blackberries and Vanilla Ice Cream...yummm.....
Huge raspberries that fit on our fingers like black olives!!
And our freezer is stocked with applesauce and pearsauce!

I found this yummy recipe for Lemon Glazed Zucchini Bread. DELICIOUS!!

Needless to say, Summer has been YUMMMMMMMY!!!!
